Homemade vegan butter recipe

Quick and easy homemade vegan butter recipe is what we’re going to dive in today.

Butter makes food tastes better. And I do miss it, I’m not going to lie. Before I went vegan I used a lot of butter for pretty much everything; baking, frying, spreading it on toast.

So I was on the lookout for a good vegan spread that would mimic regular butter.

There are couple of very similar recipes, all using refined coconut oil. I don’t use refined stuff – refined means processed. So I’d rather stick to unprocessed, unrefined food.

I finally found a recipe that, optionally uses unrefined coconut oil, which imediatelly makes it healthier than refined coconut versions of homemade vegan butter recipes.

Homemade vegan butter recipe

 

INGREDIENTS

  • 1/2 cup (125mL) unsweetened milk of your choice, I used soy milk
  • 2 tsp lemon juice
  • 1 1/4 cups  (315 ml) coconut oil, melted, see notes
  • 1/4 cup (65 ml) neutral oil, I used canola oil, see notes
  • 2 tsp nutritional yeast
  • 3/4 tsp salt

DIRECTIONS

  1. Mix the milk and the lemon juice in a bowl. Stir and allow to sit for roughly a minute. It will thicken and curdle. You can also mix them in the blender jar if you want.
  2. Add the mixture and all the remaining ingredients to a blender and blend until smooth.
  3. Pour the mixture into a container and refrigerate until set.
  4. Keep it in the fridge for 2-3 weeks, or even longer. Remove from the fridge to soften for a few minutes if you want your butter soft. It’s freezable and will last about 3 months in your freezer.

 note to yourself

  • as mentioned above, the majority of recipes uses refined coconut oil. The reason for this is to avoid the coconuty flavor. If you don’t mind a coconut flavor opt in for unrefined coconut oil. If you do mind it, then try it with refined.
  • I used canola oil because I had it at home. But you can use whichever neutral oil, like sunflower oil, olive oil or any other type of oil instead just this time not coconut oil.
