What to eat in the morning instead of scrambled eggs? Everyone says tofu. Scrambled tofu. But let’s be honest, tofu needs some TLC to taste good and the learning curve to get there is pretty up and down.
This scrambled tofu recipe is the closest I came to getting tofu taste like my once-upon-a-time scrambled eggs.
Just like with eggs, you need to flavour tofu to get the desired taste..so let’s do it.
Scramble Tofu Recipe
1 tbsp extra virgin olive oil
1/2 onion, sliced or diced
3/4 block firm tofu
1 tbsp turmeric
2 tbsp nutritional yeast
salt and pepper to taste
1 garlic clover or garlic powder
1/4 cup plant milk (60 mL)
- In a pan heat up olive oil and saute onion until translucent.
- Using your fingers, crumble in tofu, add spices and yeast and cook, stirring for couple of minutes.
- Add milk and cook until evaporated, stirring occasionally.
